Maine Blueberry Cornmeal Pancakes
Description:
A wonderful combination of cornmeal texture with the sweetness of Maine Blueberries. Ingredients: 2 c. sifted all purpose flour 2 c. cornmeal 2 T. baking powder 4 T. granulated white sugar dash of salt 1.5 c. Blueberries 2.5 c. milk 2 eggs 1.4 c. oil Directions: 1.Sift dry ingredients together. Add blueberries to dry ingredients to prevent clumping of berries in batter. 2. Mix milk, oil, eggs and add to dry ingredients. Mix well. 3.Pour about 1/4 cup of batter on preheated griddle.
