Winter Morning Custards With Apples & Spiced Croutons

Description:
A baked custard with warm fruit and crunchy croutons.

Ingredients:
4 eggs
3 large egg yolks
1/2c. brown sugar
1t. vanilla
4c. milk
Cinnamon

Directions:
1. In a bowl whisk the eggs and yolks with sugar and vanilla until frothy. Scald the milk. Pour the milk into the egg mixture slowly, stirring the whole time. Then pour into 1 cup oven proof custard cups. Sprinkle the tops with cinnamon
2. Set custard cups in a larger pan (use 2 pans if needed) and put into a preheated 350 degree oven. Using a 2 cup measure, pour hottest tap water into the pan, around the cups filling to about 1 inch.
3.Bake 35-40 minutes until the custards feel set when lightly touched in the middle.
4.Remove pan from oven (very carefully as the pan is still filled with hot water). Lift out the custard cups and let stand about 10 minutes. These can be made the night before and warmed in the microwave the next morning.
5. Top with cooked apples and spicy croutons (see Sauteed Apples and Nuts recipe.)
