Baked Apple Pancake

Description:
A delightful fluffy breakfast pancake hot from the oven

Ingredients:
2 granny smith apples
1/2 cup milk
1/2 cup flour
3 eggs
1 stick butter
Cinnamon sugar

Directions:
Core, peel and slice the two apples
Melt one half stick of butter in a sautee pan oven proof to 500 degrees.
Add the apple slices and cook until crisp tender.
In a blender mix up the 3 eggs, milk and flour until blended.
Pour over the apples and place in the oven. Preheated 500 degree oven.
Bake for about 8 minutes, until pancake starts to puff.
Melt remaining butter. Pour over pancake mixture.
Sprinkle cinnamon sugar mixture on top to taste.
Bake a few minutes more until golden brown.
Be careful when removing from oven because pan is hot.
Slide onto a plate that has been drizzled with warm maple syrup.
Serve warm with maple syrup.
