Maqelle's Easy Florentine Rolls

Our daughter Maqelle came across this yummy recipe and makes it quite often. Any that are left can be frozen - great to pull out of the freezer for unexpected dinner guests.

Ingredients:
4 green onions, finely chopped
2 cloves garlic minced
2 T olive oil
1 6oz pkg fresh baby spinach
1/4 C snipped fresh basil
1/2 tsp salt 1/4 tsp black pepper
1 1 3/8 oz pkg refrigerated pizza dough
1/4 C crumbled feta cheese
2 T toasted pine nuts
1 T melted butter
1/4 C finely shredded parmesan cheese

Directions:
Preheat oven. Grease twelve 2/12" muffin cups. In large skillet cook green onions and garlic in 1 T oil until tender. Add spinach and basil, cook and stir over medium heat just until wilted. Drain off excess liquid. Stir in salt and pepper. Set aside to cool. On well floured surface, unroll pizza dough and shape into a 12 x 8" rectangle. Brush surface w/remaining 1 T oil. Spread spinach mixture to within 1" of the edges of dough. Sprinkle w/feta chesses and pine nuts. Starting w/long side, roll dough into a spiral. Slice roll into 12 pieces. Place cut side up in prepared muffin cups. Brush w/butter and sprinkle with Parmesan cheese. Bake at 375 18 to 20 min till golden brown. After baking, let stand in muffin cups 2 min. Carefully remove and serve warm.
