Southwest Strata

This dish was developed for the Anual "Taste of Warren" by the Inn. My guests enjoy this dish with my No Wheat Corn bread.

12 Slices bread cubed
1 cup sweet red peppers or 1/2green diced
1/2 small onion diced
1 & 1/2 cup hame diced
1 oz green chillies diced (from 2 0z can)
1 1/2 cup shreaded chedar cheese
8 lg eggs
1 Tbl.dry mustard
1 tsp. salt
1 8 0z.jar Salsa
i bag 6"round taco type Chips*
Sour Cream

Grease a 9x13 " pan.
Place bread cubes in pan.
Mix next 5 ingredents (peppers through chillies) together. Place over bread.
Sprinkle on half the cheese.
Mix eggs,mustard salt & hot sauce, then ad milk.
gently pour over strata & top with remaining cheese. Cover & refregerate over night.
Bake 350 for 1 hour. let rest 10 min. cut into squares.

To serve: Place Taco chip on plate,center a square of strata, top with salsa and a dolop of sour cream. enjoy!
