Apple Muffins







Apple Muffins

Description:
Very moist, healthy and tasty. Uses common ingredients.

Ingredients:
2 cups self-rising flour
1 tsp. ground cinnamon
1/2 cup firmly packed brown sugar
1 large apple, peeled, cored and chopped
1/2 cup golden raisins
2 eggs, lightly beaten
1 cup apple juice
2 oz. butter, melted

TOPPING:
2 tablespoons butter, chopped
1/2 cup all-purpose flour
1 tablespoon firmly packed brown sugar

Directions:
Preheat oven to 400. Grease or line standard muffin cups.
Combine the eggs, apple juice and butter. Add all at once to the flour mixture and stir until just moistened (the batter should be lumpy).
Spoon batter into prepared muffin cups, filling them two-thirds full.
For topping, rub chopped butter into the flour until it looks crumbly. Stir in the brown sugar. Spoon topping evenly over muffins.
Bake at 400 until golden brown and skewer inserted into center of a muffin comes out clean. 15-20 mins.
Remove from oven and cool in pan for 5 minutes.
Serve warm, or transfer to a wire rack to cool.
