Fruit Vinaigrette

Description:
When using on a fruit salad, be creative with arranging the fruit, and drizzle with Fruit Vinaigrette, or use it as a dressing on fresh, leafy greens.

Ingredients:
Choose from an elaborate array of fresh, frozen or preserved fruits including strawberries, raspberries, blueberries, apricots, mangoes, papayas and passionfruit available in most supermarkets.

1/4 cup chopped fruit
1 cup vegetable oil
1/2 cup rice vinegar
1/2 teaspoon salt
1 tablespoon sugar
1/2 teaspoon poppy seeds, ground fennel or celery seeds
1 teaspoon orange zest
2 tablespoons orange juice
2 teaspoons minced fresh ginger root

Directions:
Combine ingredients in blender and puree 15 seconds. Chill until ready to use.
