Chile Cheese Strata

Description:
Layers of French Bread, Cheese and Chiles Baked until the top is crispy and golden. Delicious with salsa.

Ingredients:
1 loaf French bread cut into one inch cubes
1 cup liquid egg substitute
10 Eggs
1 1/2 cups nonfat half and half
1 1/2 cups 1% milk
3 teaspoons dry mustard
2 cups low fat cheese blends (Italian, cheddar, mozzarella, etc.)
2 Table spoons of minced dry onion
1 4oz can diced chiles

Directions:
Coat 9 x 13 baking dish with nonstick cooking spray.
In blender, combine eggs, egg substitute, milk, nonfat half and half and mustard. Set aside.
Place half of the French bread in bottom of pan.
Sprinkle with half of the cheese, half of the minced onion and half of the chiles. Then sprinkle the rest of the bread, chilies and minced onion.
Finally sprinkle remaining cheese on top. Saturate entire strata with egg mixture.
Cover and chill overnight.
Bake at 350 degrees for 1 hour or until golden brown and eggs are set.
