Belorussian Cookies (signature)

Unexpected guests? Try this easy and quick recipe from "A Touch of Europe Cookbook - Bringing Fresh to the Table Naturally", by Chef Erika G. Cenci.

Ingredients:
1/2 pound of unsalted butter, softened, plus extra for greasing
1 1/4 cups of sugar
1/3 cup of whole milk
3 1/3 cups of unbleached all-purpose flour
1 teaspoon of baking powder
1 teaspoon of vanilla extract
1/4 cup peach or apple marmlade

Directions:
Preheat oven to 350 degrees Farenheit

In a large bowl, using an electric mixer, beat together the butter and sugar. Continue beating until creamy. Add milk. Sift flour and baking powder together in a medium bowl, and add to butter mixture along with vanilla extract. Continue mixing until just incorporated. Grease 2 cookie sheets, brush each cookie with marmalade, and bake for 15 minutes.

Go ahead, bake a batch and taste test one cookies. The rest of the batch are storable in an airtight container for up to 3-months, that is, if its possible to stop tasting after testing just one. perhaps, you should make two batches. Enjoy!
