Description:
Recipe created and demonstrated on local, weekly TV Segment "Cooking with Erika", aired during 2001. The dried currants intensifies already great flavor.

Ingredients:
1/2 pound unsalted butter, softened
1 cup, plus 1 tablespoon of confectioner sugar
2 eggs
1/2 teaspoon orange liqueur
2 1/2 cups unbleached all-purpose flour
1/2 teaspoon of baking powder
1/3 cup unsweetened coconut, finely shredded
1/2 cup of dried currants
Confectioner sugar for dusting

Directions:
Preheat oven to 350 degrees Fahrenheit
Lightly grease 2 large baking sheet pans

Beat together butter and confectioner sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy. Sift together flour and baking powder, add flour mixture, and mix at low speed until just combined. Fold in coconut and currants. Drop dough mixture by the teaspoonfulls on the prepared baking sheets and arrange them about 1-inch apart.

Bake 12-15 minutes, or until lightly golden brown. Transfer cookies from baking sheets to cooling racks and dust lightly with confectioner sugar.

Note: Cookies will keep up to 2 weeks in an airtight container, provided that you let no one else know here you stored them, that is, until you are ready to watch them disappear. Enjoy!
