Apple-oatmeal Bread

A healthy, rich breakfast bread that will make your house smell divine! Very popular at the Inn with breakfast or afternoon tea.

4 eggs
1 1/2 cups canola oil
1 lb. dark brown sugar
2 Tbsp. vanilla
2 Tbsp. cinnamon
1/2 t cloves
1 Tbsp. baking soda
1 1/2 tsp. salt
3 cups whole wheat flour
3 cups 1-min oatmeal
4 lg. granny smith apples cored & grated w/peels
1 cup craisins
1 cup raisins

Mix eggs, oil, & sugar. Add all remaining ingredients, in order given, and mix well. Pour into (4) greased & floured 4 X 6 loaf pans. Bake at 350 for 45 minutes. Cool 10 minutes in pan. Remove & glaze with 1 cup sugar mixed with 1/4 cup passion fruit or orange juice, if desired. Freezes well, and cuts better into slices while still frozen (use a heavy butcher knife).
