Potato-bacon Casserole

Description:
This colorful recipe is a meal in itself. We serve it with fresh seasonal fruit bowl and hearty whole-grain bread from our local organic bakery.

Ingredients:
12 oz cooked, crumbled bacon
8 oz grated extra-sharp cheddar
12 oz frozen hash browns
1 lg chopped whole green onion
1 tsp parsley
1/4 cup diced red pepper
10 well-beaten eggs
1/2 cup half & half
1 1/2 cups skim milk
1/4 tsp salt
1/2 tsp pepper
1/8 tsp cayenne pepper

Directions:
Spray a half-size commercial pan (or 9 X 13) with cooking spray. Layer half of the following ingredients in this order: cheese, potatoes, bacon, onions, red pepper, parsley. Repeat layers. Mix all remaining ingredients well and pour over. Bake at 325 for 45 minutes. Broil on low until lightly browned on top. Serve immediately.

Tip: "Scramble" the bacon in a frying pan on low, clipping it occasionaly with kitchen shears as it cooks. This allows you to leave the bacon briefly while you prepare the other ingredients.
