Make an impressive presentation with this easy entree and your choice of toppings. Here's a chance to show off your artistic flair.
12 eggs, 1/2 cup cottage cheese, 1/4 cup French onion sour cream dip, 1/4 tsp salt-free seasoning blend, 1/2 cup shredded cheddar cheese. Choices of toppings such as crumbled sausage, chopped ham, sliced Canadian bacon, bacon, grilled tomato slices, grilled Bell pepper strips, sauted mushrooms, fresh herbs or your favorite salsa.
In medium mixing bowl combine eggs, cottage cheese, dip, and salt-free seasoning; mix well. Spray heavy 14" non-stick skillet with cooking spray. Pour egg mixture into skillet and cover; cook over low heat 20-25 minutes or until eggs are set.
Meanwhile in separate pan, precook or heat all topping ingredients--brown sausage or other meats, grill or saute vegetables and mushrooms; precooked meats such as ham or Canadian bacon can be heated in microwave if preferred.
When eggs are cooked through, top with shredded cheese. Arrange other toppings on cheese in an attractive pattern (here's your chance to be creative. Cover and return to heat just till cheese is melted. Loosen edges and bottom of omelet from skillet using a wide spatula. Slide omelet onto large serving platter without folding. Serve immediately.
