Thai Beef Salad

This is the perfect salad recipe if you're tired of making the same old salad. Yam or Yum (salads) are an important part of the Thai diet and usually accompany every meal, this salad has typical flavors of Thailand giving it a bright and unique flavor.

2 Tablespoons Vegetable oil
2 x 8 ounce pieces of lean beef (sirloin or tenderloin)

For the dressing:
1 Red onion, peeled and finely sliced
1/2 English cucumber, Fine julienne (strips)
1 stalk Lemongrass, very finely sliced (tender part only)
2 x 15 ml spoons Nam Pla (fish sauce)
60 ml fresh Lime Juice
2-4 Red chili peppers, thinly sliced (de-seeded if you wish for less spice)
10-15 Mint leaves
1 Yellow Pepper, Fine Julienne
4 Green onions, finely sliced at an angle
1 Cup Snow peas, Julienne, blanched very lightly
1/2 cup picked cilantro leaves or Japanese Cress
Salt and Pepper

Heat the oil in a frying pan (or heat a grill!) and cook the steaks until they are medium rare, remove from the pan and allow to cool. Slice thinly against the grain and place into a bowl. Add all of the dressing ingredients and toss together, season to taste. Plate the salad (on leaves if you like) and top with the cilantro.
