Secret Blueberry Sauce

Description:
A versatile and delicious blueberry sauce that can be made ahead and refrigerated, or served straight from stove to platter.

Delicious on pancakes, french toast, bread puddings, waffles, ice cream or crepes.

Ingredients:
2 cups (1 pint) blueberries (fresh is best, frozen also works)
1 cup water
2 tsp lemon juice
1/2 cup sugar
1/4 tsp salt (optional)
2 Tbsp corn starch
4 Tbsp water
1 Tbsp butter

Directions:
In a medium saucepan, combine berries, water, sugar, lemon juce and salt.

Bring mixture to a boil while stirring constantly, reduce heat and simmer for 15 minutes.

Transfer mixture to a blender and pulse for approx 15 to 30 seconds to break up berries. Be careful as mixture will be HOT!

Place mixture back into the suacepan and return to a gentle simmer.

Mix water with cornstarch and slowly add to simmering blueberry mixture. (Depending on the water content of your sauce, you may not need to use all of the corn starch mixture.) Stir for at least two minutes.

Remove from heat and stir in butter until melted and mixed in thoroughly.

Serve over food of your choice or save until later.
