Quinoa Vanilla Coconut Pudding

As easy as oatmeal, but with way more nutrional impact of the ancient grain QUINOA (pronounced: keen-wa)
Can also try 50% oatmeal for a different twist :)

Ingredients:
Ingredients
4 & 1/2 cups water
1/2 cup hemp seeds
1 teaspoon cinnamon
1 teaspoon pure vanilla extract
1/2 cup goji berries or raisins
2 cups quinoa
pinch of sea salt
3 tablespoons maple syrup or coconut sugar
2 tablespoons coconut oil

Directions:
How To Prepare
Place your water, hemp seeds, cinnamon and vanilla into a blender and mix to create Hemp Milk. In a medium saucepan place your hemp milk, quinoa, goji berries and salt and bring to a quick boil. Turn the temperature low and simmer until most of the liquid is absorbed and your quinoa is soft, not grainy. If it is not soft, add a little water to continue cooking. Be sure to stir often to avoid burning the bottom.
Once ready, add in your coconut oil and serve topped with chopped almonds.
