Potato Bacon Soup

Ingredients:
1 cube butter
1 onion chopped
2 cans chicken broth
1lb bacon cooked and crumbled
1 bag frozen hash browns
1 can evaporated milk
salt and pepper to taste

Directions:
Melt butter in pan and add chopped onion. Saute. Add 3 TBS flour. In another pan add hash browns chicken broth and enough water to just cover potatoes. Cook until soft. Add butter/onion mixture stir well. Add milk. Heat well add salt and pepper to taste. Instant potatoes may be added to thicken; milk, water or additional chicken broth may be added to thin. Serve hot sprinkled with crumbled bacon and shredded cheese. Perfect served in a bread bowl.
