Lemon /orange Muffins
Versatile and soft nuance of whichever citrus fruit you would most enjoy. An enchanting combination of soft cake and zesty glaze!
2 cups unbleached all purpose flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3 tsp. grated lemon or orange zest
1 cup yogurt or sour cream if decadence is desired
1/4 cup of vegetable oil
1 large egg
1 tsp. vanilla
For Glaze: 1/2 cup confectioners' sugar and 1 tablespoon of fresh lemon juice or fresh unsweetened orange juice.
Combine flour,sugar, baking powder, baking soda, salt and zest in large bowl. Stir until blended.
In a separate bowl, whisk together the yogurt or sour cream (your choice), oil, egg and vanilla until smooth.
Pour all this in the dry mix and fold just until evenly moistened. Don't overmix.
Makes tough muffins! Bake 375 degrees.
Yield: 12 med/24 dessert
