Lemon Meltaway Cookies

Description:
These lemon treats literally "melt" in your mouth.

Ingredients:
COOKIE
1 1/4 cup all-purpose flour
1/2 cup cornstarch
1/3 cup powdered sugar
3/4 cup butter, softened
1 teaspoon grated lemon peel
1 tablespoon lemon juice
FROSTING
3/4 cup powdered sugar
1/4 cup butter
1/4easpoon grated lemon peel
1 teaspoon lemon juice

Directions:
Combine all cookie ingredients in a large bowl and beat a low speed, scraping often, until well mixed (2-3 minutes).
Divide dough in half. Shape each half into an 8" x 1" roll. Wrap in plastic food wrap and refrigerate until firm (at least one hour)
Preheat oven to 350 degrees. Using a very sharp knife, cut each roll into 1/4 " slices, being careful to roll while slicing to prevent a flat edge on your cookie.
Place on cookie sheets and bake for 8-12 minutes. Cookies will not brown. We like to bake on parchment because cookies are very delicate and difficult to handle. Cool before removing from cookie sheets. They are VERY fragile at this point.
Combine all frosting ingredients in a small bowl and beat until fluffy. Please swirl on each cookie. Frosting helps to "stabilize" the cookie. We refrigerate at this point and then layer between parchment or waxed paper for service. We recommend storing in the freezer and when ready to serve, simply place on serving plate, or whatever, 30 minutes prior to serving. Sometimes we use these instead of a chocolate "pillow mint" because they literally "melt" in your mouth! ENJOY!
