Guinness Chowder

Description:
Inexpensive Irish-style beer chowder.

Ingredients:
1/2 cup olive oil
1 cup cooked, chopped bacon (8 strips raw bacon cooked)
2 large onions, chopped
2 tablespoons salt
2 heads of celery, cleaned and sliced into 1/8" pieces
2 bunches green onions, sliced into 1/4" pieces
8 potatoes, peeled and cubed into 3/8" pieces
1 teaspoon white pepper
3 Tbs garlic powder
7 cups chicken stock
3 cups Guinness beer
1/2 cup corn starch blended with 1/2 cup water
1 1/2 cups grated Parmesan
2 quarts heavy cream

Directions:
Over medium heat, heat oil and cook bacon until crisp, about 5 minutes. Add onions and salt, and cook until softened (but not browned or carmelized). Add celery, green onions, potatoes, pepper and garlic powder. Cook until celery and potatoes are half done, then add hot chicken stock. As mixture comes to a boil, add Guinness and beer and cook until celery and potatoes are just done.

Remove from heat. Add Parmesan and cornstarch mixture to stock pot, thickening the soup.

Add heavy cream. Add salt and pepper to taste.
