Gingerbread Waffles

Description:
These are wonderful on a cool fall morning!

Ingredients:
3 cups pl. flour
2 tsp. cinnamon
1/2 tsp. nutmeg
4 large eggs
1 cup canned pumpkin puree
1/2 cup molasses
4 tsp. baking powder
2 tsp. ginger
1/2 tsp. salt
2/3 cup brown sugar
1 1/4 cup milk
1/2 cup butter, melted

Directions:
Preheat waffle iron. In large bowl, combine flour, baking powder, cinnamon, ginger, nutmeg and salt. In medium bowl beat eggs and brown sugar until fluffy, then stir in pumpkin, milk, molasses and 1/2 cup melted butter. Stir wet ingredients into dry until just moistened. Do Not Overstir. Brush waffle iron with remaining melted butter to coat. Pour batter onto hot iron and bake until golden brown. Serve with warm maple syrup.
