Fluffy Banana Cake



Ingredients:
1/2 cup of shortening (soft)
1 & 1/2 cups of sugar
2 eggs
1 tsp. vanilla
Place these in a large bowl and mix well, till creamy.
Add: 1/2 cup buttermilk, mix well
1 cup mashed ripe bananas (about 3) set aside.
Sift together:
2 cups flour
1/2 tsp. baking powder
1/2 tsp. salt
3/4 tsp. baking soda

Directions:
Add 1 cup of dry ingredients to wet mixture, then 1/2 of the bananas,
mixing well. Add remaining dry ingredients and bananas, mixing. Bake
at 350*F for 30-35 minutes till top is lightly browned and knife comes
out lean from center. Top with desired topping or frosting. This is a
favorite of our guests!
