Easy Potato Pancakes

Description:
Another keeper for Grandma's Cottage Bed and Breakfast breakfast. Our guest really enjoy these light and crisp potatoes served with fresh eggs from our own hens!

Ingredients:
3 – Cups frozen shredded hash brown potatoes
2 – Tablespoons all-purpose flour
2 – Eggs (beaten)
3 – Tablespoon butter (melted)
1/2 - Teaspoon salt
Tablespoon vegetable oil

Directions:
Place the hash browns in a strainer; rinse with cold water until thawed. Drain thoroughly; transfer to a large bowl. Add the flour, eggs, butter and salt; mix well. Heat oil in skillet over medium heat. Drop batter by 1/3 cupful into oil; fry until golden brown on both sides. Sprinkle with a little shredded cheese and cook until slightly melted. Drain on a paper towel and serve.

* For a special taste add a small chopped onion to the batter.
