Diced Potato Souffle

This a different breakfast casserole. It's very moist and very popular with our guests. Make the day ahead.

1 tbsp. parsley
2 tbsp. onion
2 lbs frozen hashbrowns
2 c. grated cheddar cheese
8 diced hard boiled eggs
2 c. diced ham

Add all ingredients together in a 9" x 13" baking pan. Melt butter in a sauce pan and add flour, salt and sour cream. Mix sauce into potato mixture. Put in baking pan and bake at 350for 45 minutes or until bubbling.
