Blanca's Tres Leches Cake



Description:
Tres Leches is a very light airy cake, excellent for milk lovers and is perfect for hot summer afternoons.

Ingredients:
1/2 cup butter, softened
1 cup white sugar
3/4 cup "Carnation" evaporated milk
4 eggs
1 tablespoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 cup sour cream


Tres Leches topping:
1 cup "Carnation" evaporated milk
1 can "La Lechera" sweetened condensed milk
1 cup half & half

Directions:
♥ Preheat oven to 325 degrees F. Grease and flour an 8-in x 3-in pan.
♥ In a large bowl, cream together the butter and sugar. Beat in the eggs, one at a time, mixing well after each. Then stir in the vanilla. Combine the flour, baking powder, add to the creamed mixture and mix until all of the flour is absorbed. Finally, stir in the "Carnation" evaporated milk and sour cream. Mix for 1 or 2 minutes high speed. Pour the batter into the prepared pan.
♥ Bake in the preheated oven for 45 to 60 minutes, or until a toothpick inserted into the center of cake comes out clean.
♥ To make the tres leches topping: In a blender, combine the "Carnation evaporated, "La Lechera" condensed milk, and half & half and blend on high speed.
♥ Remove the cake from the oven and while still warm, pour the tres leches mixture over it. Let sit and cool to room temperature. Cover and refrigerate until well chilled, at least 6 hours or overnight.

Whipped cream and fresh strawberries complete this perfect afternoon delight.
