Best Oatmeal Pancakes
The best pancakes our guests have ever had - toothy yet satisfying. Our most requested breakfast for returning guests!
1 C original oatmeal (not quick oats)
1 C buttermilk
1/4 C flour
1/4 C canola oil
1 tsp baking soda
1 tsp sugar
Prepare the oatmeal and buttermilk the night before so the buttermilk can soften the oats. Place oats and buttermilk in a mixing bowl and mix well, cover and refirgerate overnight.
In the morning remove oat/buttermilk mixture from refrigerator and add eggs and oil. Mix well
In a separate bowl mix dry ingredients and mix well to distribute baking soda and sugar well.
Pour dry ingredients into oat/buttermilk mixture.
Allow mixture to stand for 10 minutes to blend flavors and make a lighter pancake while you heat up your pancake griddle to high.
We use real butter to oil the pancake griddle, and drop approx 1/4 C cakes onto the griddle to cook. Turn when pancakes begin to bubble on the top. Cook thorougly.
Serve with real maple syrup, flavored fruit syrups or your other favorite toppings. Serve with breakfast meats (link or patty sausage, ham, bacon). Also serve with oven baked apple slices or other fruit topping. You can also add blueberries etc to the batter.
