Apple-stuffed Gingerbread Waffles With Vanilla Cream Sauce

Description:
A wonderful, aromatic fall and winter dish. Great to keep you going before a hike in the fall woods or before skiing in the winter.

Ingredients:
Waffles
3 1/3 cups flour 1 1/2 cup hot coffee
4 tsp baking powder 1 1/2 cup dark molasses
1 tsp baking soda 4 eggs
3 tsp ground ginger 1 cup oil
3/4 tsp ground clove
3/4 tsp ground nutmeg
3 tsp cinnamon
1 cup packed brown sugar

8 Granny Smith apples

Vanilla cream sauce:
1 cup sugar
4 Tbl cornstarch
4 cups milk
4 beaten eggs
2 tsp vanilla

Directions:
For waffles: Mix dry ingredients together in large bowl, set aside. Mix together wet ingredients. Stir wet ingredients into dry ingredients quickly. Heat waffle iron and cook according to directions with waffle iron.

Make Fried apples:
Peel and slice 8 Granny Smith apples. Fry in 2 Tbl butter in wok until soft but not mushy. Add 3/4 cup sugar, or to taste.

Make vanilla cream sauce:
Combine sugar and cornstarch in a large microwave-safe bowl. Whisk in milk. Microwave on high uncovered at 100% power for 10-12 minutes or till thickened and bubbly, stir every 2 minutes. Stir 1/2 cup of this mixture into beaten eggs, then add the egg mixture back into milk mixture and cook for another 2 minutes or until bubbly. Stir in vanilla.

Cut each waffle in half diagonally and top with fried apples, spoon vanilla cream over and top with another waffle, and top with more vanilla cream, sprinkle with ground nutmeg. Serve with sausage patties or bacon and orange slices.
