Apple Pannekoeken

Description:
Discovered while visiting in The Netherlands, this delicious version of an oven-baked "Pan Cake" is filled with sliced apples and seasoned with fragrant cinnamon and nutmeg. For best flavor, season apples an hour or more in advance.

Ingredients:
1 large apple, peeled and thinly sliced
1/4 cup granulated sugar
1/2 tsp cinnamon
4 Tbls butter, divided in 1 Tbls pats
3 eggs
1/2 cup milk
1/2 cup all-purpose flour
1/8 tsp nutmeg
1/4 tsp vanilla
Toppings of Syrup, powdered sugar, or whipped cream optional

Directions:
Spread apple slices in single layer on plate or cutting board. Sprinkle with sugar and cinnamon, coating both sides of apple slices. If seasoning apples in advance, slices may be sealed in plastic bag until ready to bake pannekoeken.

Preheat oven to 425.
In mixing bowl, combine eggs, milk, flour, nutmeg and vanilla. Mix well. Set aside.

In glass or ceramic baking dish, melt butter in oven. Remove pan from oven and spoon seasoned apple slices in single layer over melted butter. Return pan to oven 7-10 minutes or until apples are hot. Pour batter mixture over hot apple slices and return pan to oven. Bake approximately 15 minutes longer or until pancake is puffed and lightly browned on top. Serve immediately. May be topped with syrup and whipped cream or sprinkled with powdered sugar if desired.
